BEER AND FOOD...FOR A CAUSE

This article was written by Kerry Finsand (me) and my wife Josie Finsand for Guest on tap

When food and alcohol pairings are discussed. most people automatically think of wine. But as we learned firsthand, many foods actually pair better with beer.
On Sept. 30, we attended our first beer and food pairing, the second annual Cheese, Chocolate and Cheers fundraiser at Rogue Ales Public House (1339 N.W. Flanders St.). I think it is safe to say that we are both converts.
This event, which raised money for the Foundation for Tigard Tualatin Schools, featured a 10-course beer and food pairing prepared and presented by Fred Eckhardt.
The food included a variety of cheeses, Kobe beef sausage, smoked salmon, spiced hazelnuts, several chocolate desserts and even ice cream.
At 6 p.m. we all joined in to toast Michael Jackson, the famous beer writer who recently passed away. The toast was accompanied by the Hair of the Dog Fred ale paired with the Rogue chocolate flourless rum cake.

Updates from the Abyss

I just thought I would share these photos with you as we get one step closer to releasing The Abyss. Last Thursday, while we were dropping 950 bbl tanks through the roof, we were also transferring the oak aged Abyss into the bright beer tanks to blend with the non-oak aged batch.

We plan on bottling it on Friday but wax dipping 50,000 bottles by hand takes a couple of weeks so we are still shooting for January 14th for a release date. I will send more photos and updates as they happen. Last Wednesday we tapped a test keg of this year’s The Abyss for a little employee celebration and quality control session and I have to say it was

amazing.

Cheers,
